Apple Bread is soooooo good! Like, SO GOOD. As soon as the Autumn Temps arrive, I start making apple bread, it’s a family favorite and also a great dessert to bring to gatherings. Growing up in Michigan, I was surrounded by apple orchards, and my love of all things apple runs deep.
This apple bread has become one of my specialties and my favorite apple to use in baking is the Empire Apple. Empire apples are a cross-variety between Mcintosh and Red Delicious. Their sweet and tart flavor works well in many baked goods recipes, but they are just as tasty when eaten fresh. We currently have two empire apple trees growing on our property and I cannot wait for them to bear fruit! The flavor of the apple bread will vary according to the types of apples you use, so keep that in mind when choosing!
Ingredients you’ll need:
non-stick spray or butter to grease the pans
Flour- I usually make this with all-purpose flour, but there have been times when I’ve made it with a mix of whole wheat and all-purpose flour. I will say that this is a pretty dense bread, so you won’t want to make it with 100% whole wheat in my opinion.
Ground cinnamon– The better quality cinnamon you have, the better flavor you will get. I like this cinnamon for baking.
Baking soda
Salt
Oil – I typically use canola oil, and on occasion have used coconut oil in this recipe. I do not recommend olive oil, because of its stronger flavor. And keep in mind that even coconut oil will lend a different flavor as well.
Eggs
Sugar
Vanilla
Milk – Plant milk can be substituted for regular milk in this recipe. I have used oat and soy milk successfully.
Diced apples– I usually wait until the batter is mixed before I peel and dice my apples, but if you want to do it beforehand, keep the diced apples in water with a little lemon juice to keep them from browning before adding them to the batter. Then, simply drain off the liquid before adding them.
Chopped walnuts (optional)– I only add walnuts when I bake these loaves for events, as my family prefers apple bread without nuts added.
How to Make Your Apple Bread
Preheat your oven to 350 degrees. Prepare two bread pans with non-stick spray.
Mix the flour, baking soda, cinnamon, and salt in a small bowl and set aside. Then, mix the oil, sugar, eggs, vanilla, and milk in a larger bowl and set aside– seriously just mix it all with a whisk- no fancy steps here, very easy! Take your dry ingredients in the small bowl and mix those into the wet ingredients in the larger bowl. Set aside.
Chop up your apples, 3 cups worth. Gently fold them into the bread batter. Pour half of the batter into each prepared bread pan. sprinkle the tops of the batter with extra sugar and cinnamon. Put in a preheated oven and bake for about 45 minutes or until an inserted toothpick comes out clean from the center. **Tip- I usually bake these on a top rack so that the bottoms don’t get too brown.
Pull them out of the oven when done and let them rest in the pans for about 5 minutes before trying to remove them from the pans– you can also just leave them in the pans and cut slices as you want them after cooling. Cool on wire racks or in the pan before serving. **I usually just let them cool till they are just warm, then serve with butter. It’s so good when warm and buttered, and also cold as a treat… there are plenty of chunks of apple in there for every bite! Leftover, cooled bread can be stored wrapped in plastic wrap or in a gallon ziplock bag in the fridge.
