Savory Breakfast Toast with Hummus, Avocado & Chopped Tomato
I’m not a huge fan of ‘sweet’ breakfasts… unless they are in smoothie-form, or the occasional pastry with coffee. I prefer my morning meal to more ‘savory’ or ‘meaty’, it’s gotta have some bulk to it!
This is one of my favorite options because it is quick, easy and the variations are endless! Breakfast Toasts are satisfying, and when topped with a protein, plus veggies, they are a very nutritious and filling.
I start by popping a couple slices of good, quality multi-grain bread in the toaster. I have yet to find an eggless bread that I like, but I am still on the hunt and if you have a suggestion, I’d love to hear it in the comments section! As my bread in toasting, I peel and mash the avocado with a little salt and pepper in a small bowl. I also chop up a tomato slice and set it aside.
When my toast is ready, I put the slices on a plate and spread them with hummus. Sometimes, homemade, sometimes, store-bought. Then I top each slice with the avocado mash and chopped tomato.
If I have it on hand, I also chop up some fresh basil to sprinkle on top.
This is great for mornings when time is crunched and you don’t want to sacrifice taste and nutrition for convenience. Other savory variations that I enjoy are:

Hummus and Red onion
Hummus with Greens
White Bean Dip with Sliced Cucumbers
