Another family favorite, Freeze Ahead Chicken Tetrizzini is great as a main meal. Like most meals, I make it in bulk, and freeze it in portions. It’s filling and goes well with a salad and garlic bread.
There’s two ways you can do this: 1) You can purchase the aluminum tins from the store and portion the tetrizzini out into these, cover with foil, then freeze. I like this option because then I can pull out the meal from the freezer and put it straight into the oven. This, however, isn’t always practical for freezer space and it creates more waste for the garbage bin.
2) The other option is to freeze your portions in gallon-sized ziploc freezer bags. This is better for space and all you have to do is thaw it, dump it into a baking dish and bake. It still creates waste though.
***A third option could be to freeze them in your baking pans of choice, but then you’re back to the space issue for your freezer.
For the meal you will need:
8 cups Cooked boneless skinless chicken, chopped
2 8 oz. packages of sliced Mushrooms
1 1/2 cups Green Pepper, diced
84 oz. Cream of Mushroom soup
1 cup Chicken broth
1/4 cup lemon juice
3 tablespoons dried minced Garlic
1 tablespoon Pepper
8 cups dry Spaghetti, broken into 1-inch pieces
Parmesan Cheese, to sprinkle on top when baking
Dried or fresh Parsley, to sprinkle on top after baking
Directions:
Bake your chicken in the oven or crock pot till no longer pink, chop into bite-sized pieces, set aside.
Break up spaghetti into 1-inch long pieces and boil in salted water till done. Drain, set aside.
Saute chopped green pepper in a little bit of olive oil till tender.
In a large bowl combine: Cream of mushroom soup, chicken broth, lemon juice, garlic, pepper and green peppers.
Stir in Cooked chicken and spaghetti.
Divide mixture into chosen freezer containers, label and freeze.
To use, pull out of freezer the night before to thaw. Pour mixture into a baking dish, sprinkle with Parmesan cheese and bake at 350 to hot and bubbly. Sprinkle with Parsley after it comes out of the oven.
Serve with a fresh salad and garlic bread. Carrots Au Gratin go really well with this dish as a side too. Enjoy!
