Homemade pancake mix is easy to make and delicious! We eat a LOT of pancakes and waffles in our home and this make-ahead bulk mix makes both! I usually make this once every couple of months so we always have it on hand for a quick meal or snack.

When my kiddos are wandering aimlessly around the kitchen and they are hungry but don’t know what they want, I usually suggest pancakes because who doesn’t like pancakes, right?
Properly stored, this mix will last up to 8 months. When you use it, all you need are an egg, 1 cup of water, and a couple of tablespoons of oil. Easy! Sometimes I will add a splash of vanilla or almond extract to the batter for a yummy variation.
Other additives for variety to this homemade pancake mix that we’ve added in the past are:
- chocolate chips
- cocoa powder for chocolate pancakes and a little extra sugar
- blueberries
- cherries
- cinnamon
- pumpkin puree
- pumpkin pie spice
You can also put various toppings on them!
Toppings for the pancakes or waffles are endless, but these are our favorites:
- Syrup and butter
- chopped fresh fruit and berries
- homemade berry syrups
- whipped cream
- peanut butter syrup
- honey and a sprinkle of cinnamon

How to make and store the Homemade Pancake Mix
It’s really important to store your mix in an airtight, food-safe container. I found these containers on Amazon and I use them for all kinds of mixes and ingredients. I like them because they stack, have a pour hole, and are see-through. A must for my pantry! They hold a lot, about 10 cups worth!
To make the mix, you’ll need a large mixing bowl to combine all of the ingredients. A Note- Make sure to use the freshest ingredients you can. Especially the baking powder. No one likes flat pancakes!
Homemade Pancake Mix Recipe
Ingredients:
- 10 cups flour
- 1/2 cup of sugar
- 4.5 cups of powdered milk
- 1/2 cup of baking powder
- 2 tablespoons salt
Instructions:
- In a large mixing bowl, combine all the ingredients. I use a whisk to make sure everything mixes thoroughly.
- Store in an airtight, food-safe container for up to 8 months.

To Make Pancakes You’ll Need
- 2 cups of the mix
- 1 egg
- 2 tablespoons of oil or melted butter
- 1 cup of water
- optional: splash of vanilla or other flavorings
- optional: any additives like chocolate chips or berries

Combine the ingredients in a bowl and proceed to make pancakes! (Tips- Preheat your skillet and use a light coating of oil or butter so the pancakes won’t stick to the pan. Flip the pancakes when they begin to form air bubbles on top!)

To Make Waffles
All you need to do to make waffles is increase the oil content to 3 tablespoons, easy!
